{About To'ak Chocolate} To’ak sources its chocolate from the extremely rare Ecuadorian cacao variety called “Nacional,” which traces its genetic lineage back at least 5,300 years—to the earliest known cacao domesticated by humanity. This famed variety was believed to be extinct as of 2009. Four years later, To’ak found a valley with 100-year-old cacao trees that have been confirmed by DNA tests to be 100% pure Nacional. To’ak is working to restore chocolate to its former grandeur and push its boundaries to new horizons. Our mission is to transform the way the world experiences dark chocolate, elevating its making and tasting onto the level of vintage wine and aged whisky.

{About our Chocolate Expert - Katie Chan} In 2013, she founded her own company – “The Chocolate Club Hong Kong” with the vision to promote chocolate appreciation to the masses through education and to import a carefully curated selection of artisanal chocolate brands to widen the selection of high quality chocolate products in Asia. Her chocolate education and pairing workshops were well received by partners such as: The Racing Club HK, New World Club, Dickson Watches and Jewellery, HSBC and Hennessy. Her expertise did not go unnoticed by the industry professionals. In 2015, she was appointed as Judge of the International Chocolate Awards World Final session and Consultant for one of Hong Kong’s biggest chocolate events - The Harbour City Chocolate Trail from 2015 – 2018.
{About our Whisky Educator - Carmen Tam} Experienced specialist in alcoholic beverage, with extensive knowledge and skills in appreciation, manufacturing, training, food pairing, sales and marketing of whisky. Her over many years’ experience includes managing over 200 different whisk(e)y and working for a distillery in Scotland, with in-depth experience in manufacturing processes. The First Certified Whisky Diploma Holder in Hong Kong, Co-Founder of WhiskyU, Advanced Certificate from Wine and Spirits Education Trust, Professional Spirit Judge from International Wine & Spirit Competition in London and also the spirit Judge in China Wine and Spirits Awards. The most frequent spirits trainer in Hotels and Club houses in HK, especially whisky, well known to deliver lively and insightful training courses.
