We hope you are enjoying this busy Champagne week with two back-to-back events! And to keep the momentum, we are delighted to invite you for an opportunity to be amongst the first few in Hong Kong to taste a new cuvée from Billecart-Salmon – Cuvée Louis Salmon Blanc de Blancs 2006 ! Thanks to our fellow Chevalier Bertrand Carquillac from Liber Wines, we will host a dinner on Monday, 25 November, at Beef Bar, showcasing a very special selection of all the top cuvées from Billecart-Salmon: - Brut Rosé (in Magnum) - Cuvée Sous Bois - Vintage 2008 - Cuvée Louis Salmon Blanc de Blancs 2006 - Cuvée Nicolas François Billecart 2006 - Cuvée Elizabeth Salmon Rosé 2007

This cuvée was named in tribute to Louis, Elisabeth Salmon’s brother, who was passionate about oenology and highly involved in the creation of the House. Originating from 100% Grand Cru fruit from the best parcels of the Côte de Blancs, 5% vinified in old oak, it spends 11 years on its lees with partial malolactic fermentation and has a 6g/l dosage. Mathieu Roland-Billecart describes it as 'Meursault with bubbles' and suggests decanting it into a carafe and enjoying it throughout a meal. It's very rich and full, yet with bright, balancing acidity and chalky minerality. For those who attended our Grand Chapitre in May, you may also remember how delicious the Cuvée Sous Bois that we served during the cocktail was ! Truly an amazing collection of prestige cuvées ! Hope you can make it !
